First I would like to say that I agree with one of the reviewers that the spinach artichoke tart is worth the book just by itself! I have made it several times now, and it's always the first thing gone.
This is my 3rd book by Maria, and I think they get better each time. I own this book on my ipad and love how easy it is to use and how nice the layout it. As far as the book goes, there is much more to it than just the recipes. As with all of Maria's books, she includes the background information that helps to really understand the theory behind, and how everyday products that we've been used to getting are just plain awful. Maria, my kids will never eat an Eggo waffle again! The thing that's great about the recipes, is that Maria uses everyday recipes that we are all used to seeing, and "healthifies" them. There is always a nutritional comparison from the original to the healthified version. Seeing a bagel, for example, go from 55g carbs to 2.9g carbs is just is mind boggling, and you are not sacrificing taste!
The other important thing is that Maria is not just focusing on low carb. All her ingredients are made with whole, real food, organic where ever possible. Even the whey protein used in many recipes is from hormone/antibiotic free source. You are truly getting the best of all worlds, nutrition and health wise.
If you are considering changing your diet, this is absolutely the way to go, and I cannot imagine anyone would ever go back. Eliminating grains first and foremost is life changing, and so much for the better. Unlike a lot of people, I was not an overweight child, and was not overweight even in my 20s. Then the 30s came, a couple of kids later, all of a sudden the pounds started piling up, about 5-7 per year, but 8 or so years later, that really adds up.
Maria has revolutionized nutrition and cooking for my family. We love to eat healthy, delicious meals, (if it doesn't taste good, why bother?!) We are nutrition savvy; having studied nutrition for 3 decades. Maria's approach provides the nutritional purpose behind her recipes; and it cuts to the chase. No more do I spend countless hours researching nutritional information, what we should be eating to fulfill that nutritional goal; and then more time poring through countless recipes to find a great way to cook those healthy foods.
What I really enjoy, is that in some aspects; I am learning to cook again. Let's face it, sometimes everyday cooking can feel like a chore rather than a fun experiment in culinary expression. Because Maria takes a completely different approach than what I've encountered; I find it best to follow her recipes exact. It has renewed my joy for cooking 'everyday meals' because I wonder, "How is this going to turn out? How is this going to taste?" Well, her recipes turn out perfect and are delectable!
When we eat better, we feel better; even emotionally. I believe that as we put healthier foods into our body, we want to act healthier. I believe that we feel good about ourselves when we put good foods into our bodies. However, at no point am I willing to sacrifice bold flavors and good tasting meals; I knew there was a way to have the best of both worlds! So, I was concerned about ditching rice, and to a lesser extent pasta. I have not missed the carbs one bit, (and yes, I was a 'healthy' carb junkie)! Stated differently, the food is so great that we focus on the wonderful taste, and forget about what we are "missing" or not eating.
Maria's love for her family, food, and nutrition shines through in everything she produces.
